Mining is a little bit different from in the rest of the world. Ores regenerate, and when you mine an ore, there's a tiny chance it will regenerate with a greater value. Each ore has its own value, so they'll all give you a different amount of Gold and Level Experience.
Once you level up, you'll get access to more mines which held greater values. Read more about leveling here.
